Thai Basil Quinoa Salad
LET’S DO THIS:
Roast the sliced zucchini/squash, sliced tomato and strips of pepper in the oven at 450 for 20 minutes, flipping after 10 minutes.
Cut avocado in half, remove pit, spoon it out and crush it up, like a sandwich spread.
Toast bread at the last minute. Spread hummus on one side, crushed avocado on the other. Assemble sandwich with roasted veggies.
Thai Basil Quinoa Salad is ready-to-eat.
